Dentro deste termo engl\u00f3banse diferentes aspectos como a calidade hixi\u00e9nica (que os alimentos sexan inocuos para o consumidor), a calidade sensorial (caracter\u00edsticas de color, sabor, aroma, textura, forma e aparencia), a calidade nutricional (que aporten os macro e micro nutrientes necesarios para a correcta nutrici\u00f3n humana), e a calidade atribu\u00edda a outros atributos de valor (coma a orixe xeogr\u00e1fica, o m\u00e9todo de produci\u00f3n, etc.) garantindo en todo momento a seguridade dos alimentos, isto \u00e9 a non presenza de substancias naturalmente t\u00f3xicas e o control e cuantificaci\u00f3n de outras que poden resultar prexudiciais para determinados grupos da poboaci\u00f3n como al\u00e9rxenos ou outros compo\u00f1entes alimentarios promotores de intolerancias alimentarias. No contexto actual, os compradores demandan cada vez m\u00e1is informaci\u00f3n sobre os produtos que consumen. Isto implica que a industria alimentaria debe intensificar os seus esforzos para certificar a orixe dos alimentos, a s\u00faa produci\u00f3n e transformaci\u00f3n sustentable, as\u00ed como a mellorar a calidade dos seus produtos para diferenciarse do resto de opci\u00f3ns nos lineais do supermercado.<\/p>\n<p>A este respecto, dende o Instituto abordamos os seguintes Programas de I+D+i:<\/p>\n<h2>Alimentaci\u00f3n nutritiva e segura<\/h2>\n<p>A produci\u00f3n de alimentos (tanto de orixe vexetal coma animal) leva parello o uso de procesos tecnol\u00f3xicos e substancias qu\u00edmicas durante toda a cadea alimentaria que poden afectar tanto ao valor nutritivo dos alimentos coma \u00e1 presencia nestes de substancias t\u00f3xicas. Nesta li\u00f1a estudaranse os efectos dos procesos de produci\u00f3n e transformaci\u00f3n de alimentos sobre a calidade f\u00edsica, qu\u00edmica e microbiol\u00f3xica dos alimentos. Por outra banda abordarase o estudo da presenza de substancias t\u00f3xicas causadas por procesos de produci\u00f3n e transformaci\u00f3n de alimentos ao longo da cadea alimentaria, estudando e modelando as s\u00faas principais rutas de degradaci\u00f3n (hidr\u00f3lises, fotodegradaci\u00f3n, degradaci\u00f3n microbiana), identificando os metabolitos de degradaci\u00f3n formados coa finalidade de propo\u00f1er estratexias para reducir a s\u00faa presenza nos alimentos.<\/p>\n<h2>Calidade sensorial dos produtos alimentarios<\/h2>\n<p>Os produtos alimenticios que hoxe en d\u00eda chegan ao consumidor, fano en gran parte, tras ser sometidos a unha serie de procesos de manipulaci\u00f3n ou transformaci\u00f3n. Nesta li\u00f1a, mediante a utilizaci\u00f3n de t\u00e9cnicas diversas, ser\u00e1n analizados os mecanismos qu\u00edmicos, encim\u00e1ticos e microbiol\u00f3xicos involucrados na xeraci\u00f3n e posterior evoluci\u00f3n do aroma durante o procesado tecnol\u00f3xico de diversas matrices alimentarias, tanto de orixe vexetal coma animal. Tam\u00e9n se estudar\u00e1n os mecanismos que afectan a s\u00faa estabilidade, inclu\u00edndo o desenvolvemento de estratexias para minimizar os off-flavours.<\/p>\n<h2>Desenvolvemento de produtos alimentarios con valor engadido elevado<\/h2>\n<p>Un sistema agroalimentario moderno e competitivo esixe o desenvolvemento de novos produtos de excepcional calidade ou coa presenza de substancias altamente demandas polos consumidores (\u00e1cido hialur\u00f3nico, substancias bioactivas, etc). Nesta li\u00f1a desenvolveranse novos produtos e procesos de elaboraci\u00f3n que permitan unha mellor percepci\u00f3n polos mercados dos produtos alimentarios galegos.<\/p>\n<h2>Alimentaci\u00f3n e sa\u00fade<\/h2>\n<p>Un alimento saudable \u00e9 aquel que presenta unha clara relaci\u00f3n entre o consumo dos seus nutrientes b\u00e1sicos e outros compostos bioactivos (como prebi\u00f3ticos, probi\u00f3ticos, p\u00e9ptidos bioactivos, carotenoides, vitaminas, compostos fen\u00f3licos, fitoestr\u00f3xenos, \u00e1cidos graxos, etc.) coa mellora das funci\u00f3ns fisiol\u00f3xicas do organismo (dixestibilidade, metabolismo, biodisponibilidade ou poder nutricional e bioactividade global das nosas dietas.) e, polo tanto, a prevenci\u00f3n de enfermidades. Por outra banda, cada vez son m\u00e1is demandadas as dietas \u201ca carta\u201d baseadas na xen\u00f3mica humana. Por tanto, nesta li\u00f1a estudaranse os efectos de compostos bioactivos presentes en produtos alimentarios sobre a sa\u00fade humana. Por outra banda considerase de grande importancia para o Instituto iniciar li\u00f1as de investigaci\u00f3n sobre \u00e1s relaci\u00f3n entre dieta e xen\u00e9tica humana, para o que ser\u00e1 preciso establecer relaci\u00f3n con grupos coma o de Medicina Xen\u00f3mica da USC.<\/p>\n<div class=\"custom-block  outlined \">\n<h2>Obxectivos de desenvolvemento sostible<\/h2>\n<div class=\"d-flex
